Ingredients:
• 500g mutton (goat/lamb), cut into small pieces
• 2 tbsp oil (preferably coconut or mustard oil)
• 1 large onion, finely chopped
• 1 tbsp ginger-garlic paste
• 2 green chilies, slit
• 1 sprig curry leaves
• 1 tsp mustard seeds
• 1 tsp cumin seeds
• 1 tsp turmeric powder
• 1 tbsp red chili powder (adjust to taste)
• 1 tbsp coriander powder
• 1 tsp garam masala
• 1 tbsp lemon juice
• Salt to taste
• Fresh coriander leaves (for garnish)
Optional (for extra flavor):
• 1/2 cup grated coconut (fresh or dried)
• 1 tsp fennel seeds
• 1/2 tsp black pepper powder
Instructions:
1. Marinate the Mutton:
• In a bowl, mix mutton pieces with turmeric, red chili powder, coriander powder, ginger-garlic paste, and salt.
• Let it marinate for at least 30 mins (or overnight for better flavor).
2. Cook the Mutton:
• Heat oil in a pan, add mustard seeds and cumin seeds. Let them splutter.
• Add curry leaves, green chilies, and onions. Sauté until golden brown.
• Add the marinated mutton and cook on medium heat, stirring occasionally.
• Cover and cook for 25-30 mins (add a splash of water if needed) until the mutton is tender.
3. Dry Fry (Sukka Style):
• Once the mutton is cooked, increase the heat and stir-fry until the moisture evaporates and the meat gets a slightly crispy texture.
• Add garam masala, lemon juice, and grated coconut (if using). Mix well.
4. Garnish & Serve:
• Garnish with fresh coriander leaves.
• Serve hot with steamed rice, roti, or naan.
Tips:
• For extra spice, add 1 tsp black pepper or crushed dried red chilies.
• If you like it tangy, add a bit of tamarind paste.
• For a Kerala-style version, use coconut oil and more coconut.
