I remember my mom making these potato tacos when I was growing up. We loved them! Furthermore, they're perfect with mashed potatoes.

INGREDIENTS
- 1 (3.25 ounce) package instant mashed potatoes, (for example, Idahoan™ Mark Russets Squashed Potatoes)
- ½ cup diced onions
- 1 tablespoon vegetable oil
- salt and pepper to taste
- 8 corn tortillas
- ½ cup vegetable oil for frying, or more as needes
GARNISHES
- Shredded lettuce
- Chopped tomatoes
- 4 tablespoons shredded Cheddar-Monterey Jack cheese blend
- Salsa
DIRECTIONS
Step 1
Plan pureed potatoes as indicated by bundle headings.
Stage 2
Heat oil in a skillet over medium intensity. Sautee diced onions in oil until delicate and clear, 3 to 5 minutes. Add cooked pureed potatoes and season with salt and pepper.
Stage 3
Put tortillas on a plate. Heat in microwave until flexible, 15 to 20 seconds.
Stage 4
Place 1/4 cup of potato combination in every tortilla, overlay down the middle and secure each end with toothpicks.
Stage 5
Heat oil in a skillet until sparkling. Broil every taco until firm and brilliant brown, around 1 moment on each side.
Stage 6
Eliminate toothpicks and top with trims.
